Low Carb Air Fryer Pickles

I love, love making and eating Fried Pickles. They are the perfect snack for so many occasions. However, they can definitely be a high calorie and high carb snack that doesn’t always fit into your diet plan. By making these air fryer pickles a low carb snack that also happens to be keto friendly, you can easily have a second helping.

CAN YOU AIR FRY FRIED PICKLES
It sounds like a redundant question and it doesn’t mean you are going to deep fry and then air fry. And the answer is yes! The pickles are made just like you are preparing them to go into a vat of hot oil, however, you just add them to the basket of your air fryer and turn it on. It’s so easy and without the oil mess.

Two of my favorite foods are pickles and cheese. Add those two foods to my new favorite kitchen appliance and this is what you get. Sure you could make air fried pickles and cut out out the whole oil in the fryer thing. However, I choose to air fry because I do not want to have to deal with the whole oil fryer thing. To be honest, oil frying is the last thing that I need to have in my diet. Discovering the air fryer has been a great thing to happen in my kitchen.

Making air fryer pickles requires setting up a dipping station, just as if you were making chicken picatta.
Dip pickle chips in pork rinds, egg mixture, then in almond flour mixture, coating both sides and lightly pressing flour mixture into chips. You can spray the air fryer basket with cooking spray, I did not and it was fine. Place pickle chips in the air fryer basket in a single layer; spliting into batches. Air fry for 8-10 minutes.

I must disclose that I am in the midst of a low carb diet (yet again…) so I tend to look at things a bit different from many folks. As a result, too ‘fry’ something we will use low carb ingredients rather than the usual breading ingredients that you would find in most fried goodies. To start with, you will need an air fryer. While I do not specifically endorse any air fryer over another, I would suggest reading the reviews to make your decision on which air fryer best meets tour needs. The good news is that you can find a decent one online at a good price. You will also need low carb bread crumbs. You can find low carb bread crumbs online. However, if you are not a low carb person, you can also just get away with regular bread crumbs.

INGREDIENTS
  • 1/2 cup crushed pork rinds (Try spicy pork rinds for added flavor!)
  • 3 tablespoons Parmesan cheese, finely grated
  • 16 sliced dill pickles
  • 1/2 cup almond flour
  • 1 large egg beaten
  • 1 teaspoon olive oil cooking spray
DIRECTIONS

  1. Mix crushed pork rinds with Parmesan cheese in one bowl. In a second bowl add a whisked egg. In a third bowl add almond flour.
  2. Dredge each pickle in the almond flour, then in the egg, and finally in the pork rind mixture.
  3. Place in a greased air fryer to form one single layer of breaded pickles.
  4. Spray the tops with olive oil using an olive oil mister.
  5. Set air fryer timer to 6 minutes at 370 degrees Fahrenheit.
